Roasted Chicken Recipe
This is a delicious chicken recipe that is basically one meal in one pot, perfect for those busy days.This recipe yields 4 servings.
Ingredients:
- 1 chicken, halved or quartered
- 1 clove garlic, minced
- 1 tablespoon butter
- freshly ground black pepper
Vegetables
- 2 pounds potatoes, cut into 1-inch chunks
- 4-6 carrots, cut in 2-inch pieces
- 3-4 celery sticks, cut in 2-inch pieces
- 1 cup chicken broth
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- salt and pepper to taste
Directions:
- Preheat oven to 425F/220C and lightly oil a roasting pan.
- Wash chicken and pat dry. Combine garlic, butter, and pepper. Separate the skin and rub butter mixture underneath each piece. Arrange chicken in pan.
- Combine potatoes, carrots, celery and garlic, and toss with olive oil. Pour veggies over chicken and sprinkle with salt and pepper.
- Pour chicken broth over chicken and vegetables.
- Roast, basting occasionally for about 1 1/4 to 1 1/2 hours or until chicken thigh reaches a temperature of 165. If needed, add more chicken broth.
