Quick Chicken Stroganoff

A delicious chicken Stroganoff recipe that’s quick and easy. Serve it over rice, pasta, noodles or with fries. This recipe yields 2 large servings, or 4 smaller ones.

Ingredients:

  • 2 chicken breasts
  • 2 packs chicken bullion
  • 1/2 pound mushrooms, sliced
  • 1 onion, sliced
  • 1 garlic clove, minced
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice

Ingredients for Sauce:

  • 1 cup cream
  • 2 tablespoons flour
  • 2 tablespoons butter
  • 1/4 teaspoon nutmeg
  • salt and pepper to taste

Directions:

  1. Cut chicken breasts into half inch cubes.  Mix  onion and garlic with the chicken in a bowl.
  2. Add lemon juice and salt and pepper and let marinate for at least 1 hour.
  3. In a pan, melt butter with olive oil and add marinated chicken. Add mushrooms to the pan and saute the until golden.
  4. To make the sauce, melt butter in saucepan and add flour, blending until smooth.
  5. Add the cream, nutmeg, and salt and pepper to taste and let simmer on medium heat until thickened.
  6. Add the sauce and chicken bullion to the chicken and serve.
