Quick Chicken Stroganoff
A delicious chicken Stroganoff recipe that’s quick and easy. Serve it over rice, pasta, noodles or with fries. This recipe yields 2 large servings, or 4 smaller ones.
Ingredients:
- 2 chicken breasts
- 2 packs chicken bullion
- 1/2 pound mushrooms, sliced
- 1 onion, sliced
- 1 garlic clove, minced
- 1 tablespoon butter
- 1 tablespoon olive oil
- 2 tablespoons lemon juice
Ingredients for Sauce:
- 1 cup cream
- 2 tablespoons flour
- 2 tablespoons butter
- 1/4 teaspoon nutmeg
- salt and pepper to taste
Directions:
- Cut chicken breasts into half inch cubes. Mix onion and garlic with the chicken in a bowl.
- Add lemon juice and salt and pepper and let marinate for at least 1 hour.
- In a pan, melt butter with olive oil and add marinated chicken. Add mushrooms to the pan and saute the until golden.
- To make the sauce, melt butter in saucepan and add flour, blending until smooth.
- Add the cream, nutmeg, and salt and pepper to taste and let simmer on medium heat until thickened.
- Add the sauce and chicken bullion to the chicken and serve.
