Mango Chicken Stir-Fry
This is a delicious spicy mango chicken stir-fry recipe that your whole family will love. This recipe yields 4 servings.
Ingredients:
- 4 boneless, skinless, chicken breasts
- 1/2 cup vegetable oil, divided
- 1/3 cup lime juice, divided
- 1/3 cup tequila or water
- 1 package Taco seasoning mix
- 2 tablespoons fresh cilantro, chopped
- 1 package torn lettuce leaves
- 1 avocado, pitted, peeled, and cubed
- 1 mango, pitted, peeled, and cubed
- 1 1/2 cups halved fresh strawberries (or any other berry)
Directions:
- To make the marinade, whisk together 1/4 cup oil, 2 tablespoons lime juice, tequila or water, and taco seasoning in a baking dish,
- To make salad dressing, remove 3 tablespoons from marinade and place in a small bowl. Stir in remaining oil, lime juice, and cilantro. Set aside.
- Add chicken to the marinade and toss to coat. Cover and refrigerate for at least 1 hour.
- Preheat grill to medium-high and cook chicken for 5-7 minutes on each side or until juices run clear.
- In a large bowl, combine all remaining ingredients. Pour half of salad dressing over salad and toss well. Divide salad onto each individual plate.
- Cut each chicken breast into slices and arrange on top of divided salad. Drizzle reaming salad dressing over chicken salad and serve.
