Mango Chicken Stir-Fry

This is a delicious spicy mango chicken stir-fry recipe that your whole family will love. This recipe yields 4 servings.

Ingredients:

  • 4 boneless, skinless, chicken breasts
  • 1/2 cup vegetable oil, divided
  • 1/3 cup lime juice, divided
  • 1/3 cup tequila or water
  • 1 package Taco seasoning mix
  • 2 tablespoons fresh cilantro, chopped
  • 1 package torn lettuce leaves
  • 1 avocado, pitted, peeled, and cubed
  • 1 mango, pitted, peeled, and cubed
  • 1 1/2 cups halved fresh strawberries (or any other berry)

Directions:

  1. To make the marinade, whisk together 1/4 cup oil, 2 tablespoons lime juice, tequila or water, and taco seasoning in a baking dish,
  2. To make salad dressing, remove 3 tablespoons from marinade and place in a small bowl. Stir in remaining oil, lime juice, and cilantro. Set aside.
  3. Add chicken to the marinade and toss to coat. Cover and refrigerate for at least 1 hour.
  4. Preheat grill to medium-high and cook chicken for 5-7 minutes on each side or until juices run clear.
  5. In a large bowl, combine all remaining ingredients. Pour half of salad dressing over salad and toss well. Divide salad onto each individual plate.
  6. Cut each chicken breast into slices and arrange on top of divided salad. Drizzle reaming salad dressing over chicken salad and serve.
