Jamaican Jerk Chicken
This Jamaican jerk chicken recipe is authentically sweet, spicy and perfect for barbecues! This serving yields 5-6 servings.
Ingredients
- 6 pounds chicken parts
- 2-4 tablespoon lime juice
- 1 tablespoon allspice, ground
- 1 tablespoon thyme, dried
- 1 teaspoon cinnamon, ground
- 6-7 whole, fresh habaƱero chiles
- 1/2 teaspoon black pepper, freshly ground
- 1/2 teaspoon cayenne pepper
- 2 tablespoons fresh ginger, peeled and chopped
- 2 tablespoons dark brown sugar
- 6 cloves garlic, peeled and crushed
- 1/3 cup green onions, sliced
- 1/4 cup red wine vinegar
- 1/4 cup olive oil
Directions
- First, combine all ingredients except chicken in food processor or blender. Processuntil smooth. Next, place chicken pieces in large glass pan. Rub with marinade. Liftskin and rub marinade underneath.
- After that, cover with plastic wrap. Refrigerate 2 hoursor longer. And then, place chicken pieces on grill, skin side down. Lastly, baste frequently andturn every 10 minutes or so, cooking until chicken is done.
- Jamaican Jerk Chicken is ready to serve!
